Beau Constantia Pas de Nom White

This vintage we produced 9000 bottles of the PAS DE NOM WHITE, carefully crafted from grapes grown on the cool mountainous slopes of Constantia. With scrupulous attention being paid to every step in the winemaking process, this year’s beautiful blend of 80% Sauvingnon blanc and 20% Viognier is more lively than ever. To retain the fresh and delicate aromas that have become characteristic of our cool climate vineyards, the Sauvignon Blanc component was fermented at a cool temperature in a stainless steel tank. The Viognier fraction, however, was barrel-fermented in order to add some weighty texture to the vibrantly fresh medium. The wine was then allowed to remain on the lees for 5 months before it was blended and lightly filtered prior to bottling.

The PAS DE NOM WHITE is a clear wine has a light straw colour with a hint of lime green. It boasts uplifting aromas of pear and tropical green melon on the nose, with a creamy, full-flavoured palate that is perfectly balanced by a refreshing minerality. This elegant offering is rich and vibrant with a long finish. Drink 2017 to 2019.
